On Sundays, I usually try to do a bit of meal prep—nothing fancy, just a few staples that make healthy eating during the week easier. I’ll often cook up some quinoa, beans, or batch-chop veggies and store or freeze them in portions.

Because I already had cooked white beans in the freezer, today’s prep came together quickly. I pulled them out and decided to whip up a batch of my Decadent High-Protein Chocolate Mousse.   • 4 scoops chocolate protein powder
  • 3 frozen bananas
  • 1 cup cooked small white beans, frozen
  • 2 tbsp frozen avocado
  • 1/3 cup caramel date sauce (or use pitted Medjool dates)
  • 1/3 package soft tofu (approx. 45 calories)

Optional sweeteners:

  • Maple syrup or honey, to taste

Toppings (1 tbsp each):

  • Walnuts or pecans
  • Chia seeds
  • Hemp hearts
  • Pumpkin seeds

Instructions:
